Our Devilish Good Eggs have been on the Ford’s menu since we first opened eight years ago. At that time deviled eggs were considered picnic favorites. I remember thinking, will these eggs sell in a seafood restaurant? What makes our Devilish Good Eggs so special is that our recipe calls for two parts yolk and one part egg whites. This gives the deviled eggs an additional richness and makes them extra creamy.

When I was developing the recipe, I thought, “what goes better with eggs than bacon?” So I added some praline bacon to the dish. I had just seen a re-run of a Paul Prudhomme cooking show and he talked about praline bacon. The praline bacon not only provides a crunchy texture that complements the creaminess of the eggs, but there’s also a hint of sweetness to the bacon that balances the dish perfectly.

Each correct answer via a Facebook comment on the post counts as one entry for the drawing. One winner will be randomly selected at the end of the contest to win a $100 Ford’s Fish Shack gift card. The winner will be announced on Facebook on December 30, 2019.
