The Maine Chips is one of our most labor-intensive appetizers. When I first developed the recipe, we struggled to source the right potato for this dish. After some research and lots of recipe testing, we found that the Kennebec was the perfect potato for this dish. It’s grown for both fresh market use and chipping. Our culinary team manages the quality of the potato throughout the year to ensure we are using the highest quality.

When it comes to preparing the Maine Chips for guests at Ford’s, we hand-cut the potatoes daily and fry them daily. This ensures the final dish will have perfectly crispy chips. Then we add the lobstah, basil aioli, melted blue cheese, and marinated tomatoes to finish the dish.
